The spring time can often be full of change, new projects and re-evaluating our paths. Making it a time we should really be listening to our inner self and connecting with out intuition. Enter this Mushroom Tofu Scramble!

This dish is full of energetic properties for opening up the mind and enhancing our intuition and psychic abilities. 

It’s also perfect for meal prepping if you want to focus your week on this type of intention. Make it once and you will have meals for a few days. Delicious for breakfast, lunch, or dinner so you will really be set.

Before we get into this Mushroom Tofu Scramble recipe, let’s talk about some of the health benefits.

Mushroom Tofu Scramble: The Health Benefits

These ingredients are super simple and jam packed with nutrition.

Tofu

  • Nutrient Dense

Mushrooms (exact benefits will depend on variety)

  • Source of Anti-oxidants

  • May benefit brain and heart health
  • Support healthy digestion

Spinach

  • Vitamins A, C, & K
  • Folate (B9)
  • Iron
  • Anti-oxidants

Mushroom Tofu Scramble: Main Magickal Properties

Tofu (Soybeans) – spirituality, psychic ability, strength, protection

Mushrooms – strength, psychic abilities, divination, 

Spinach – passion, strength, fertility, prosperity

Turmeric – strength, energy, protection

While going through the steps to prepare your scramble, focus on what you are trying to accomplish. How do you want to feel? What do you want to see? Focus on that feeling of being connected to your inner self and opening up the mind. What will that look like for you?

And Now The Mushroom Tofu Scramble Recipe!

Makes 4 – 6 servings | Time: 30 minutes

Ingredients:

  • 2 blocks extra firm tofu
  • 2 cups chopped mushrooms
  • 1/2 cup green onion
  • 4 cups spinach

Sauce Ingredients:

  • 200 ml nondairy milk (I like coconut the best for this)
  • 5 tbsp nutritional yeast
  • 1 1/2 tsp turmeric
  • 1 1/2 cumin
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black salt
  • 3 tsp Dijon mustard
  • black pepper to taste

Preparation:

  1. Whisk together your sauce ingredients in a bowl and set aside.
  2. Prepare your pan with a bit of veggie broth or oil for cooking. I also like to add a dash of coconut aminos and 1 tsp garlic. Both optional.
  3. Chop your onion and mushrooms and stir fry for a few minutes until they become translucent.
  4. Add in your spinach to wilt.
  5. Crumble your tofu in the pan and fry for about 5 minutes to brown it.
  6. Now add in your sauce. Stir thoroughly to combine. 
  7. Simmer on a low heat to a allow the sauce to thicken. About 10 minutes. 
  8. While the sauce if thickening place your hand palms down above the pan (far enough above so it’s not too hot) and state the following, “Allow this tofu and mushrooms, gifts from the earth, to open my mind to my own wants and needs. May my mind be free and intuition be sound.”

This meal is perfect for spring when we are jumping into new projects and making changes in our lives. Listening to our intuition is so important to help us move through the paths that are right for us. It’s also just wonderful any time of day, breakfast, lunch, or dinner.
